Raspberry merengue sandwich

I went to the supermarket today and realised that we have got fresh English raspberries now!

Fresh Icelandic raspberries

I love eating seasonal food and right now we are going into an amazing time with all the fantastic berries and other fruits and vegetables. Seeing and tasting those raspberries reminded me of the time we went to pick them in Iceland and I made this beautiful dessert. As you can guess, Iceland hasn't got the best weather in the world and it is quite hard to grow things like berries and other summer fruit. But it is possible and in a small area you can go and pick your own. So we did and this recipe is the result.

We, here in England are so lucky that we get some amazing raspberries and we absolutely love them. So you might actually find more raspberry, or even strawberry, recipes here soon :)

This is a super simple recipe, and you can swap out the raspberries for your fruit of choice, English strawberries will be equally good for example, plump blueberries or what ever takes your fancy.

Merengue

2 egg whites

100 gr. caster sugar

Preheat oven to 100°. Whisk the egg whites and slowly add the sugar. Whisk until stiff peaks. Divide with a tablespoon into 8 dollops on a baking tray. Bake for an hour and then turn the oven off and leave it in there while the oven cools down.

Filling

250 ml. double cream or whipping cream

1 tablespoon icing sugar

200 ml. fresh raspberries

Whisk the cream until soft peaks and add the icing sugar. Keep whisking until almost reaching stiff peaks. Roughly smash up the berries and add to the cream.

Divide the cream between the merengue making 8 sandwiches. Decorate with some more fresh berries and fragrant fresh mint. Put in the fridge for a half an hour to an hour before serving.
