Coconut chicken and sweet potato salad

This dish is my all time most popular one. It has been published in the biggest cooking magazine in Iceland, been shared on social media more then any of my other recipes and loved by everyone who has tried it. I am so proud of it and love it when I get messages from people who have tried it and loved it! If you would ask my husband what his favorite chicken dish is he would certainly say this one! I really hope you try it, you won’t be disappointed.

1 medium-large chicken

3 tablespoons desiccated coconut

3 tablespoons chopped almonds

1 tablespoon fish sauce

½ dl olive oil

3 tablespoons lemon juice

handful fresh chopped coriander

2 tablespoons runny honey

1 teaspoon turmeric

2 cloves of garlic, crushed or grated

salt and pepper

Start by spatchcocking the chicken.

Mix all the other ingredients and rub it all over the chicken. If you can let the chicken sit in the marinade for at least an hour it will make a world of difference but if you can’t, don’t worry.

Cook on the bottom shelf in a preheated oven at 180° for 40-50 minutes. If the chicken starts to brown too much you can cover it with some foil but you want it to get nice and golden and crispy without burning. When you remove it from the oven you should of course rest it for 10-15 minutes and I recommend scraping everything from the bottom of the oven tray, they are the best bits!

Sweet potato salad

1 large sweet potato

2 cm piece of finely chopped leek

3 tablespoons raisins

50 gr. Pecan nuts

small handful chopped parsley

small handful chopped coriander

1 small dried red chilli, crushed

Dressing

4 tablespoons good quality extra virgin olive oil

2 tablespoons runny honey

1 tablespoon balsamic vinegar

1 tablespoon lemon juice

2 tablespoons orange juice

2 cm piece of ginger, finely grated

½ teaspoon cinnamon

pinch of salt

Cut the sweet potato into bite size pieces and put on a roasting tray. Drizzle with olive oil and season with salt and pepper. Bake at 180° for 30 minutes. Mix in a bowl with the rest of the ingredients and pour the dressing over. Serve warm with the amazing chicken :)
