Soy and sesame Trout

I am so lucky to have family who enjoy fishing and are fishermen so I quite often get really nice Icelandic fish. But I have to admit that I am not the best fish cook in the world. The truth is, that I am a bit afraid of cooking with fish. It is such an amazing ingredient and I am always afraid I might screw it up. This is also why most of my fish recipes are very simple and easy, to make it less likely that I mess it up. This time I managed to make something easy enough that I could cook it properly and it was very tasty! The fish fillets were small and only needed a short time in the pan which makes this a fast, easy, tasty, healthy meal :) If you use larger pieces of fish you just need to adjust the time accordingly. I cook the fish 60% of the time on the skin and 40% on the fish.

1 kg trout fillets

2 cm piece of ginger

1/2-1 red chilli

2 garlic cloves

2 tablespoons soy sauce

2 tablespoons sesame oil

4 tablespoons rapeseed oil

2 tablespoons sesame seeds

Grate the ginger and garlic and mix with finely chopped chilli and the rest of the ingredients.Marinade the fish for at least half an hour but 1-2 hours is just perfect. Heat the pan to a high heat and place the fish on it. There are a lot of different methods to cook fish, I sometimes cook it just on the skin and just spoon the sauce or even butter over the fish while it cooks. Small pieces of fish like the ones that I used don’t need a lot of time and 3 minutes was perfect this time. The only thing you don’t want to do is to over cook the fish! I want it a bit rare in the middle, if it is cooked all the way through it can get a bit dry and that is not a very nice way to treat this sort of amazing food. This time I cooked the fish for 2 minutes on the skin side and 1 minute on the fish it self. With this I served a simple sweet potato mash. I cooked the potato until soft. Mashed with some butter and salt and pepper. Easy peasy :)
