Oven baked cheesy cod

When I was a little girl my mum always made the same fish dish. She put cooked rice in the bottom of a oven proof dish, haddock on top, seasoning, sliced tomatoes on top and grated cheese over everything. Into the oven and served with very basic vegetables like iceberg lettuce and chopped cucumber. This good old dish from my mum was the inspiration for this one. I have to say it has come a long way from what she used to to and hopefully tastes a bit better.

800 gr - 1 kg cod fillets, you can use haddock if you want

1 onion

150 gr chestnut or button mushrooms

1/2 red pepper

few tablespoons plain flour

1 tablespoon paprika

1 tablespoon curry powder

1 teaspoon turmeric

salt and pepper

1 egg

a bit of milk

1 can coconut milk

1/2 cube chicken stock

1 teaspoon dijon mustard

1 tomatoes

Grated cheddar or other cheese you like, and as much as you like

coconut oil or other oil for cooking

Preheat the oven to 200°. Cut the vegetables into smallish pieces and cook in a pan in a little oil for 3-5 minutes. Put them in the bottom of an oven proof dish.

Put the flour and the spices on a plate. Break the egg into a bowl and whisk lightly adding a little bit of milk. Cut the fish into pieces and put in the egg mixture and then flour. Brown in the same pan used for the veggies. Add a little oil if needed. Once browned, remove from the pan and put on top of the vegetables. Pour the coconut milk into the pan, put half a chicken stock cube, mustard and a little more curry. Let this simmer for 2-3 minutes and season to taste. Pour this over the fish, put the sliced tomatoes on top, grated cheese over everything and into the oven for 10 minutes untill golden and gorgeous. With this I served quinoa, but you can serve what you fancy, rice, potatoes or even steamed vegetables. A nice salad is always a good choice as well :)
